It is essential for pregnant and lactating women and adolescent girls to receive the right nutrients, as they are active agents in our food systems and key to nourishing future generations.

From farmers to chefs, from caretakers to politicians, women are the beating heart of our food systems and communities, playing multiple roles that nourish future generations and the planet. Anaemia is a global issue affecting pregnant women in the United Arab Emirates where I live and across the globe. Anaemic women are at greater risk of increased child and maternal death, as well as birthing babies with a low birth weight, who are at greater risk of childhood obesity.

Ingredients that help increase the chances of a healthy pregnancy, especially in the first trimester, and provide the nutrients needed for adolescent girls are foods rich in folate, such as: leafy greens, chickpeas and kidney beans, black-eyed beans, pinto beans and fava beans. Cereals are also a key source of folate, alongside traditional foods such as falafel, nabet soup and foul.

The Middle East is also home to large numbers of refugees and the conflict in Yemen is particularly devastating to children in their first 1,000 Days. Preventing malnutrition amongst pregnant/lactating women and young children, through eating a nutritious diet, rich in micronutrients, is crucial to prevent life-long and intergenerational consequences that are felt beyond nutrition.

Introduction to Chef Manal

Chef Manal Alalem is an Egyptian professional and TV Chef. Throughout her career, Manal has encouraged women’s involvement in the culinary industry by leading specialized culinary courses for women as well as setting up the Manal Club – a network of 6,000 women from across the Arab world who take part in culinary festivals, shows, and competitions.

Chef Manal is a champion of Middle Eastern and Arab cuisine and regularly posts cooking videos of traditional dishes on her YouTube channel. Additionally, Manal has published several cookbooks such as Manal Alalem Kitchen and features in a number of newspapers and magazines. Manal also works as a Goodwill Ambassador for the UN World Food Programme and is a member of the Scaling Up Nutrition (SUN) Movement’s Lead Group.

The following recipes are Chef Manal Alalem’s creation; a merging of her passion for tasty, nutritious food, and her commitment to people and planet. They not only celebrate local, seasonal, micronutrient-rich ingredients that invest in local livelihoods and communities, but also protect and encourage biodiversity in our diets. Each recipe has been carefully crafted to incorporate aspects of the Chefs’ Manifesto’s 8 Thematic Areas, whilst also aligned to Scaling Up Nutrition Movement’s (SUN) 2021- 2025 Strategy, and chosen many Future 50 Foods ingredients.
